Peach Ice Cream Bars



These peach ice cream bars are a delightful treat, combining the sweet and juicy flavor of ripe peaches with creamy ice cream. Perfect for a refreshing summer indulgence.

Ingredients:

  • 2 cups ripe peaches, peeled and diced
  • 1 cup heavy cream
  • 1/2 cup condensed milk
  • 1 tablespoon lemon juice
  • 1/4 teaspoon vanilla extract
  • 1/4 cup honey or maple syrup

Instructions:

Using a blender, blend the peaches into a smooth paste

Put the heavy cream, condensed milk, lemon juice, vanilla extract, and honey/maple syrup in a bowl and mix them together

Mix everything together well

Place the mix into popsicle molds

Place a popsicle stick in each mold

Put it in the freezer for at least four hours, or until it's solid

Once the popsicles are frozen, run the molds under warm water for a few seconds to make it easy to take them out

Serve and have fun!

Nutella Hot Chocolate

  • 2 cups milk
  • 1/4 cup Nutella
  • Whipped cream optional

Instructions:

Get the milk hot in a small saucepan over medium-low heat, but don't let it boil

Mix the Nutella into the hot milk with a whisk until everything is well mixed and hot

Put the Nutella hot chocolate into mugs

If you want, you can add whipped cream and chocolate shavings on top

Pumpkin Pie Truffles



These sweet, melt-in-your-mouth pumpkin pie truffles are made with a creamy pumpkin filling and coated in rich chocolate. They're the perfect bite-sized treat for fall!

Ingredients:

  • 1 cup pumpkin puree
  • 1/2 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup maple syrup
  • 1 tsp pumpkin pie spice
  • 1/2 cup dairy-free chocolate chips, melted
  • 1/4 cup chopped pecans or walnuts optional

Instructions:

In a medium bowl, mix together the pumpkin puree, almond flour, coconut flour, maple syrup, and pumpkin pie spice until well combined

Roll the mixture into small balls and place them on a baking sheet lined with parchment paper

Place the baking sheet in the freezer for about 30 minutes to firm up the truffles

Dip each truffle into the melted chocolate, then return them to the baking sheet

Sprinkle chopped pecans or walnuts on top of each truffle, if desired

Return the truffles to the freezer for another 10-15 minutes to set the chocolate

Store the truffles in an airtight container in the refrigerator for up to 1 week

Russian Yeast Blinis



Russian yeast blinis are thin, fluffy pancakes that are perfect for breakfast or as a savory appetizer. This recipe yields deliciously soft blinis with a hint of sweetness.

Ingredients:

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 2 1/4 teaspoons active dry yeast
  • 1/2 cup warm milk
  • 2 large eggs
  • 1/2 cup warm water
  • 1/4 cup melted butter
  • 1 teaspoon vanilla extract

Instructions:

Warm milk and sugar should be mixed together in a bowl

Add the yeast and let it sit for 5 to 10 minutes until it starts to foam

In a bowl, mix the yeast with the eggs, warm water, melted butter, and vanilla extract

Mix in the flour a little at a time until you have a smooth batter

Wrap it in plastic wrap and set it somewhere warm for an hour or so

It will double in size

Toast or crepe pan that doesn't stick should be heated over medium heat

Use a little butter or oil to grease it

Put a small amount of batter in the middle of the pan and swirl it around to make a thin circle

For one to two minutes, or until the bottom is golden brown and the edges begin to lift

There are two blini

Cook the other side for one to two minutes, until it is golden brown and fully cooked

Place the blinis on a plate and repeat with the rest of the batter, making sure to grease the pan as needed

You can top the warm Russian yeast blinis with sour cream, caviar, smoked salmon, or jam, or anything else you like
