Russian Yeast Blinis



Russian yeast blinis are thin, fluffy pancakes that are perfect for breakfast or as a savory appetizer. This recipe yields deliciously soft blinis with a hint of sweetness.

Ingredients:

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 2 1/4 teaspoons active dry yeast
  • 1/2 cup warm milk
  • 2 large eggs
  • 1/2 cup warm water
  • 1/4 cup melted butter
  • 1 teaspoon vanilla extract

Instructions:

Warm milk and sugar should be mixed together in a bowl

Add the yeast and let it sit for 5 to 10 minutes until it starts to foam

In a bowl, mix the yeast with the eggs, warm water, melted butter, and vanilla extract

Mix in the flour a little at a time until you have a smooth batter

Wrap it in plastic wrap and set it somewhere warm for an hour or so

It will double in size

Toast or crepe pan that doesn't stick should be heated over medium heat

Use a little butter or oil to grease it

Put a small amount of batter in the middle of the pan and swirl it around to make a thin circle

For one to two minutes, or until the bottom is golden brown and the edges begin to lift

There are two blini

Cook the other side for one to two minutes, until it is golden brown and fully cooked

Place the blinis on a plate and repeat with the rest of the batter, making sure to grease the pan as needed

You can top the warm Russian yeast blinis with sour cream, caviar, smoked salmon, or jam, or anything else you like
