Vegan Berry Galettes with Easy Pastry



These Vegan Berry Galettes with Easy Pastry are a tasty treat that shows off the bright flavors of fresh berries. The golden-brown, flaky crust surrounds a juicy, sweet filling, making the perfect mix of tastes and textures. Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup vegan butter, cold and cubed
  • 1/4 cup ice water
  • 2 cups mixed berries such as strawberries, blueberries, raspberries
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1 tablespoon plant-based milk for brushing
  • 1 tablespoon maple syrup for brushing
  • Pinch of salt

Instructions:

Turn on your oven and heat it up to 375F 190C

Pulse the cold vegan butter and flour in a food processor until the mixture is crumbly

Slowly add ice water until the dough sticks together

Place the dough in the fridge for 30 minutes while it's wrapped in plastic wrap

Put berries, sugar, cornstarch, lemon juice, and a pinch of salt in a bowl and mix them together

Cut the dough into equal pieces and roll them out into circles

Sprinkle the berry mix in the middle of each circle of dough, leaving space around the edges

Fold the dough's edges over the berries, making pleats if you need to

Use plant-based milk and maple syrup to brush the edges of the galettes

The crust should be golden brown after 25 to 30 minutes in the oven

Let it cool down a bit before you serve
