Ingredients:
- 200g halloumi cheese, sliced
- 2 boneless, skinless chicken breasts
- 4 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, sliced
- 1/4 red onion, thinly sliced
- 1/4 cup Kalamata olives, pitted
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
- 1 teaspoon dried oregano
- 1 lemon, juiced
- 1 clove garlic, minced
Instructions:
Warm up your grill or grill pan over medium-high heat
Add salt, pepper, and half of the dried oregano to the chicken breasts
The chicken should be cooked all the way through after being on the grill for about 6 to 7 minutes on each side
Take it out and let it rest for a few minutes before cutting it
Add the lemon juice, minced garlic, olive oil, and the rest of the dried oregano to a small bowl and mix them together using a whisk
Add pepper and salt to taste
Mixed salad greens, cherry tomatoes, cucumber, red onion, and Kalamata olives should all be put together in a large salad bowl
Put a nonstick skillet on medium-high heat and lightly oil it with olive oil
The halloumi slices should be grilled for one to two minutes on each side, or until they are golden brown and have grill marks
Put the grilled halloumi and chicken slices in the salad bowl
Pour the dressing over the salad and toss it around to cover everything
Serve the chicken and halloumi salad right away
If you want, you can add a squeeze of lemon juice on top
